What happens

We're so excited to bring you this collaboration with Flavour Fred (George Fredenham). URBAN FORAGE: Established on the 6th April 2021 by Christian Amys. Christian is a previous Masterchef: The Professionals Quarter Finalist, Michelin Chef and Master Forager. Based in The Stanmer Craft Museum in Stanmer Park and run courses, supply bespoke clients and consult on sustainable foraging. FLAVOUR FRED x URBAN FORAGE Christian and I recently got together to talk about a couple of hands-on sessions with groups looking to learn about some of our favourite ways to find, cook and preserve some of the best flavours season by season. For 2026 we have 2 dates allocated for Wild Garlic (10th May 2026) & Mega Mushroom Special (27th September 2026) starting at 11am with a 3 hour flavour-led foraging walk followed by demonstrations (examples below) from us at 2pm including tips & tricks as well as some tasty food & drink throughout. Finishing at 4pm with a full follow-up provided of whats been seen and discussed. Wild Garlic 10th May 2026: Wild Garlic Capers, Wild Garlic Kimchi, Wild Garlic Aioli, Fermented Wild Garlic Sarmale along with various sauces, pickles and many other delights. Mega Mushroom Special 27th September 2026: All out fungi special witha fungi walk and wonderful selection of mushroom based dishes. Last time we served; Wild Mushroom velouté with sautéed Blusher and Oyster Mushroom; Wood ear & dulse seaweed turnip cake, Japanese quince, rowanberry, rosehip & chilli jam; Gourd “ganoush”, smoked confit ceps; 5 textures of Porcini Orzo stew with bbq lions mane; Chocolate Orange Jelly Ear Truffles (jaffa cakes); Mushroom Mejadra Rice, Wild Greens; Deep Deep Porcini Brownie. Tickets are £65pp, limited to 25 people Terms & Conditions Apply 11AM - 4PM Not included on our year subscriptions.
