What happens
We're so excited to bring you this collaboration with Flavour Fred (George Fredenham) this year! George is Professional Forager with 20 years experience in Wild Flavours in particular culinary uses, preservation, distilling and the history surrounding them. Having had his own wild food pub/restaurant for 10 years with appearances on Countryfile, Food Unwrapped and in The Times his interest is how to effectively make wild food and drinks utilising local ingredients. Since then he's have travelled Eastern Europe to learn about traditional methods for wild flavours whilst working closely with low-impact farms, permaculture specialists and sustainable building practices in the wild. Focused on bringing you the ultimate Wild Food experience, we will embark on a foray around Stanmer Park nature reserve with Identification and ID tips, before heading back to our woodland HQ to show you how to prepare, cook and eat the best wild food around! We will finish serving you a forage themed lunch with wild medicinal tea and drinks, debrief and a chance to ask your Experts guides questions. Wild Garlic 6th April: Wild Garlic Capers, Wild Garlic Kimchi, Wild Garlic Aioli, Gespacho, Green Oil, Fermented Wild Garlic Sarmale along with various sauces, pickles and many other delights. Elderflower 7th June: Elderflower Champagne/Mead/Tepache, Elderflower Vinegar & Elderflower Fritters with Elderflower Sumac Ice Cream. 11AM - 4PM Not included on our year subsriptions.
